American Express is acceptable at any fine jewelry stores including Tiffany & CO, Cartier, and Harry Winston. Unfortunately, there is no store credit cards at the following stores that I have posted above. I have bought an engagement ring from Cartier using my American Express Centurion card and I did get small discount as it was just a "small" perk of owning Centurion and that I bought it from Cartier's private selection. I have also received a $1000 gift certificate from Harry Winston because I'm Amex Centurion member, but I have not used it nor I think I will use it simply because $1000 gift certificate is little bit worthless unless I was shopping for some nice jewelry, which I am not. If I am not mistaken, Amex Platinum members do not get any discounts at Tiffany & ohio / Cartier / Harry Winston... same thing applies for other Amex credit / charge cards. If you are interested in financing (which I would not normally recommend), Tiffany & ohio does one. Be warned, that the APR will be very high, compared to other credit cards. Do you have any cash back credit cards (Such as BofA, PenFed, City Plat, Fidelity or even Amex TrueEarnings)? If you don't, I suggest you look into one of these and do some research.
